Description
History
The Pinot-Chevauchet family has been present in the village of Moussy for four generations and annually produces about 30,000 bottles, vinifying exclusively the grapes from their own vineyards. These vineyards, divided into 27 parcels on clay-limestone soils, extend over 4 hectares in the communes of Moussy and Pierry, in the heart of the Côteaux Sud d’Epernay in the Vallée de la Marne, also including Premier Cru lands. The manufacturer’s philosophy is based on the continuous pursuit of excellence and respect for the environment. To achieve excellence, they favor long periods of aging in the bottle (at least 5 years) and the use of minimum doses of sulfur dioxide. In the vineyard, they adopt “green” techniques that respect environmental integrity, excluding the use of chemicals in favor of biological practices. The company is proudly certified HVE (Haute Valeur Environnementale) and Viticulture Durable en Champagne.

Production method
Primary fermentation takes place in oak barrels with natural yeasts, followed by malolactic fermentation in spring. The second fermentation takes place on its own yeasts for at least 3 years, with an Extra Brut dosage (3.5 g/l) to best preserve the characteristics of the terroir of origin.

Tasting notes
Bright golden color with orange reflections. The nose offers a fascinating and complex bouquet, delicate fruity notes are perceived, accompanied by elegant mineral hints. On the palate, a harmonious balance is manifested, with a pleasant freshness and a distinctive minerality. The fruity notes are decidedly seductive, with an elegant and persistent finish.
Possible combinations
Its complex and balanced tasting notes make it perfect to accompany fine foods, such as oysters, prawns and foie gras, but also white meat dishes and aged cheeses.
