Description
History
Alain Thiénot founded his own champagne house in 1985 and in just a few years he achieved high levels of quality by acquiring numerous vineyards. Today the house is managed by his sons Stanislas and Garance, who have established their reputation by creating balanced and clean cuvées.

Production method
After harvesting, the grapes are subjected to gentle pressing and the must is fermented in oak barrels. Malolactic fermentation is avoided to preserve the natural acidity of the wine. After fermentation, the wine is bottled and subjected to a second fermentation in the bottle, where it is left to mature on the yeasts for at least 3 years.

Tasting notes
It has a bright gold color and a very fine perlage. The aromatic bouquet is balanced and elegant, with hints of elderflower and chamomile, melted butter, yeasts, chalk minerals and pastry notes. On the palate it is broad and full-bodied, with a very fine bubble that delicately caresses the palate, and a balanced freshness in the finish.
Possible combinations
It is recommended to taste it for meditation or in combination with refined dishes, such as smoked salmon, caviar, foie gras or dishes with white truffle.
