History

The secret of the excellence of Chablis wines lies in geology: the “chablisienne” actually rests on a large basin of limestone and clay called “kimmeridge” made up mainly of prehistoric oyster shells and marine fossils. This is where the proverbial minerality of the great Chardonnays from this area comes from. Isabelle and Denis Pommier are a dynamic couple from Poinchy, very prominent among the new production excellences of Chablis. Active as viticulturists since 1990 on a vineyard area that has grown from 2 to 15 hectares over the years, today, 24 years after the first bottling, they enjoy enormous critical consideration at an international level. Robert Parker’s judgment is emblematic in this regard as he went so far as to classify the Pommier cuvée “Croix aux Moines 2010” as the best chardonnay in the world for that vintage. There are four family crus: the aforementioned “Croix aux Moines” in the village classification, and three 1er Crus: the powerful “Troesmes”, the mineral “Côte de Léchet” and the very elegant “Fourchaumes”. Wines with a classic approach, with bright fruit and fascinating verticality produced with a view to passionate interpretation of the terroir through organic farming methods. All fermentations are spontaneous and take place with the exclusive use of indigenous yeasts.

Tasting notes

Wine with a pale golden yellow color, with greenish reflections. On the nose, an intoxicating scent of yellow and white fruit, notes of apple, lemon peel, white flowers and wet stone with that typical smoky note coming from the Chablis soil. The taste is soft, pulpy but held together by a very fresh and sharp sip.

Possible combinations

Excellent in combination with fish-based dishes and/or tasty aperitifs.
