Description
History
The De Marchi family acquired Isole and Olena, two neighboring farms in the Chianti Classico area, around the 1950s. Paolo Marchi immediately began to give his own qualitative approach to the company after having studied agriculture. The production of quality wine that was also able to express and tell the Tuscan soul was immediately sought after; priority is therefore given to traditional products such as Vin Santo, Chianti Classico and Cepparello, a very high expression of pure Sangiovese.

Production method
The grapes come from the company’s oldest vineyards, located at an average altitude of about 450 metres. The harvest takes place in mid-October, when the grapes have reached polyphenolic ripeness, and the vinification takes place in red at a controlled temperature with a long maceration on the skins. After 18 months of aging in barrique, the wine is bottled and left to rest in the bottle for about a year before being released for sale.

Tasting notes
Intense ruby red color with garnet rim. On the nose notes of ripe fruit such as wild berry jam and raspberry, blackberry and plum, with mineral and balsamic notes. Rich and intense bouquet of spices: roasted coffee, tobacco, black pepper, cloves and cinnamon in a very elegant and refined mix. Intense, explosive on the palate, with good initial softness and substance; the sip closes with a balanced acidity and silky tannins. Also in the finish it is elegant and long with flavors of toasting and dark chocolate.
Possible combinations
Cepparello di Isole e Olena is perfect in combination with important and tasty dishes based on red meat or game. Given its great caliber, if left to rest for a few years in the cellar it also becomes a great meditation wine, to be enjoyed in every single nuance.
