History
Located in Gaiole in Chianti, Castello di Ama is a renowned Tuscan winery known for producing high-quality wines that reflect the unique terroir of the region. The Haiku is one of the estate’s distinctive labels, born from the desire to create a wine that combines the elegance of Sangiovese with the depth and complexity of international varieties like Merlot and Cabernet Franc.

Production Method
The grapes are hand-harvested and undergo rigorous selection. Fermentation occurs in stainless steel tanks at controlled temperatures, followed by maceration on the skins to extract aromas and tannins. The wine then matures for about 12 months in French oak barriques, a portion of which are new, adding complexity and refinement to the organoleptic profile.

Tasting Notes
The Haiku 2020 presents an intense ruby red color. On the nose, it releases aromas of ripe black fruits, such as blackberry and plum, accompanied by mineral notes of dark granite, spices, and a ferrous nuance. On the palate, the wine is full-bodied and structured, with well-integrated tannins and pleasant freshness that balances the richness of the fruit. The finish is long and persistent, with hints of sweet spices and minerals.
Food Pairing
This wine pairs perfectly with red meat dishes, game, and aged cheeses. Excellent with roasts, braised meats, and flavorful Tuscan cuisine.
