Description
History
Castello di Ama, located in Gaiole in Chianti, is one of the most respected wineries in Chianti Classico; founded in the 1970s by four families, it has built its reputation under Marco Pallanti and Lorenza Sebasti for sustainability, the valorization of historic vineyards, and careful vineyard practices. The “Ama” cuvée was introduced in 2010 to distinguish more generous young‑vine expressions from the estate’s top‑tier labels, allowing a more accessible Sangiovese that still expresses terroir. Ama is made from sustainably farmed vineyards (Equalitas certification) with selective clonal material.

Vinification
Hand harvest; varieties vinified separately in stainless steel using indigenous yeasts; cuvaison of about 23‑25 days; malolactic fermentation; aged 12 months in second‑passage oak barriques.

Tasting notes
Deep ruby red color; aromas of dark red fruits like cherry and plum, floral notes of violet, strawberry and forest floor, with subtle mineral undertones; palate is well balanced, with lively acidity, integrated yet perceptible tannins, good structure and a fragrant, persistent finish.
Food pairing
Pairs nicely with Tuscan dishes like steak, roasted meats, pasta with meat sauce, pork dishes, mushrooms, and medium‑aged cheeses; best served around 16‑18 °C.
