History
Cantina Togliana is deeply rooted in the Piedmontese winemaking tradition, particularly renowned for producing Carema, a mountain wine that reflects the unique terroir of the rocky Canavese hills. By blending traditional methods with modern innovations, the winery consistently produces high-quality wines that embody the distinctive character of the region.
Grapes used
- 100% Nebbiolo.
Production method
- Harvest: Manual with meticulous grape selection, conducted in mid-October.
- Vinification: Fermentation in steel tanks with temperature control for 15-20 days, followed by prolonged maceration on the skins.
- Aging: 36 months in Slavonian oak barrels, followed by an additional 12 months in bottle.
Alcohol content
- 13.5% vol.
Tasting notes
With a garnet red color and orange hues, this wine offers a complex bouquet of ripe red fruits, dried violets, sweet spices, and a hint of leather. On the palate, it is structured with elegant tannins and a fresh acidity that balances its power. The finish is long and persistent.
