Description
History
Founded in 1960 by ten local winemakers convinced of the viticultural qualities of the area, this cooperative winery has overcome the difficulties of the period, becoming a point of reference in the area with its current 101 members, of which 71 suppliers of grapes who grow on just 13 hectares of total vineyard surface area.
The Carema Classico ‘Etichetta Nera’ by Proprodotti di Carema is a pure Nebbiolo grown in the Carema basin on terraces protected from wind and cold. The land is of morainic origin, the altitudes reach 650 meters above sea level, and the farming system adopted is the traditional topia, a pergola supported by stone pillars.

Production method
The alcoholic fermentation takes place in stainless steel tanks, with approximately 12 days of contact between the must and the pomace. After fermentation, the wine ages for 2 years, one of which in large Slavonian oak barrels, before being put on the market.

Tasting notes
Ruby red with garnet reflections. On the nose, vivid notes of fruits in alcohol, flowers and aromatic herbs emerge, enriched by spicy aromas of cinnamon and nutmeg. The softness and medium structure in the mouth are supported by the intense freshness and smooth tannic texture.
Possible combinations
Suitable for pairing with tasty risottos, dishes based on various meats, as well as platters of mature cheeses and cured meats.
