History
Torre alle Tolfe is a small organic artisan estate (~13 ha) near Siena, committed to native varieties using natural farming, spontaneous fermentations, and ageing in cement or neutral wood.

100% Canaiolo
Vinification (and aging)
Fermented in concrete with indigenous yeasts; brief maceration (~4 hours whole-cluster), followed by ageing in neutral barrels or cement to maintain fruit clarity and freshness.
Alcohol content
Between 14 and 14.5% vol, fitting the bold and structured style of this Toscana IGT
Tasting notes
Color: bright ruby red.
Nose: freshly gathered blackberries, mild sun-dried fabric aroma, and subtle spice.
Palate: fruity, supple, with soft tannins and good persistence; structured yet approachable .
Food pairings
Pairs beautifully with light red meats, tender game (such as venison), simple Tuscan dishes (like pappardelle with wild boar, grilled chops), aged cheeses, gourmet burgers, and flavorful vegetarian fare.
