Production method
The grapes, grown on clayey soils rich in schist, marl, sandstone, and bedrock, are hand-harvested. Alcoholic and malolactic fermentation occurs spontaneously in steel tanks using indigenous yeasts. The wine matures for 12 months in barrels, followed by 6 months in vitrified cement and an additional 8 months in the bottle, without fining or filtration, thus preserving the purity and integrity of the product.
