Description
History
We are in the cultivated lands of the Canalicchio and Montorsoli crus, both located on hills at around 300 meters above sea level, with soils characterized by clay, manganese, magnesium and iron in the first case, and by marl, clay and silt in the second. The winery, managed by a family with a long tradition in the sector, owns approximately 19 hectares of vineyards and is committed to the territory with great passion and respect.

Production method
After being taken to the cellar, the grapes are destemmed and delicately pressed, then fermented in stainless steel containers at a controlled temperature for approximately 25 days, with the skins. Subsequently, the wine is separated from the skins and pressed, to then mature in 25 and 50 hl Slavonian oak barrels for at least 36 months, followed by a further 12 months in the bottle before being marketed.

Tasting notes
Dark ruby red color with garnet hints. On the nose you can perceive intense aromas of ripe dark fruit and berries, such as cherries, wild strawberries, blueberries and black cherries in alcohol, accompanied by floral notes of violets, dried flowers and aromatic herbs typical of the Mediterranean scrub. There are also spicy hints of licorice, tobacco and chocolate, with light notes of iron and leather.
Possible combinations
Excellent as a meditation wine, as it manages to express itself over time. However, it is excellent with important dishes based on red meat or mature cheeses, or with substantial gourmet preparations.
