Grapes used
Sangiovese grosso (locally called brunello) 100%
Production method
The grapes are harvested around mid/end of September. Upon arrival in the cellar, the grapes are destemmed and softly pressed. They are subsequently placed in stainless steel containers for the alcoholic fermentation, which takes place at a controlled temperature. After the malolactic fermentation, the wine is decanted into large oak barrels (between 30 and 80 hl) and aged for about 2 years. After which it is bottled where the 5-year period foreseen by the regulations ends.
