Description
History
Domaine Faiveley is a winery founded in 1825 by Pierre Faiveley in Nuits-St.-Georges. Over the generations, the family has expanded its estates by acquiring prestigious vineyards in various areas of Burgundy and beyond, such as in Chablis and California. Currently, the Domaine is managed by Erwan Faiveley and his sister Eve. In 2021, they announced the purchase of a stake in Williams Selyem, an estate specializing in Pinot Noir.

Production method
The Pinot Noir winemaking process in Burgundy follows rigorous techniques to enhance the unique characteristics of the grape. The grapes are harvested by hand and the bunches are selected in the vineyard to guarantee the quality of the final product. The grapes are pressed and fermented in oak vats for an average period of 10 to 15 days. During this process the must is stirred regularly to extract the tannins and aromas from the skins.
The aging is 12-14 months in oak barrels.

Tasting notes
Dark ruby colour. The nose opens with delicate floral scents, fruity notes of small red fruits and spicy hints. The taste has a solid structure, with an elegant and mature tannic texture, aromas of good intensity and a pleasantly fresh and persistent finish.
Possible combinations
This wine lends itself perfectly to accompany red meats, aged cheeses and mushroom-based dishes. It is a wine that matures well over time and that offers an extraordinary tasting experience to those who love powerful and decisive wines, but at the same time extraordinarily elegant.
