Description
History
Founded in 1818 by Nicolas‑François Billecart and Elisabeth Salmon in Mareuil‑sur‑Aÿ, the house remains one of the few family-owned Champagne estates, now led by the seventh generation. Brut Réserve (now “Le Réserve”) is the heart of their non-vintage line: a cuvée rooted in tradition, refined over time with reserve wines, fermentation in steel and oak barrels, and a long 30–50 month lees aging to highlight elegance, freshness and minerality.

Pinot Noir, Chardonnay, Pinot Meunier (approx. 28–29–43 %)
Vinification
Gentle pressing, fermentation in stainless steel and oak (barrel) with partial malolactic, blend includes over 50% reserve wines, extended sur lie aging in bottle for at least 30–50 months, Extra Brut or Brut low dosage disgorgement.

Tasting notes
Straw yellow color, fine and persistent mousse. The nose presents white fruit (apple, pear), citrus, white flowers, biscuity and toasty notes. The palate is creamy, fresh, chalky mineral, with vibrant acidity and a long, elegant, harmonious finish.
Food pairing
Perfect as an aperitif with oysters, shellfish, sushi, and tartare. Also pairs well with light white meats, delicate risottos and fresh cheeses. Serve at 8-10 degrees.
