Vinification
The grapes undergo gentle pressing with careful must selection. A short skin maceration gives the wine its delicate rosé colour. Secondary fermentation takes place in bottle according to the traditional method, followed by an extraordinary 120 months of lees ageing. The wine is released as Dosage Zero, with no added sugar after disgorgement.

Tasting notes
Antique pink colour with copper reflections and an extremely fine, persistent mousse. The bouquet reveals small red berries, floral nuances, spice and classic notes of bread crust and pastry developed during long lees ageing. On the palate it is harmonious, mineral and vibrant, with remarkable balance and a long savoury finish.
Food pairings
Excellent with oysters, raw seafood, sushi, sashimi, fish tartare, shellfish and seafood risottos. Its structure also allows it to pair beautifully with roasted white meats and refined gastronomic dishes.
