Production method
The grapes are harvested manually and carefully selected before pressing, followed by a period of maceration on the skins. The alcoholic and malolactic fermentation take place spontaneously in vitrified cement containers, without the aid of bacteria or starters. Further refinement takes place for at least 36 months in large oval wooden barrels, followed by natural decantation for 3 months before bottling without filtration or clarification. The wine is then aged in the bottle for a further 6 months before being ready for tasting.
