Description
History
The company owns thirteen hectares of vineyards located on the beautiful hills of the “Anjou noir” in western Anjou, characterized by poor soils that are difficult to work. They focus on producing high quality wines, which represent the expression of the terroir and offer length, density, freshness and complexity. They follow certified organic cultivation practices, working in harmony with the biotope and using human labor and horses to protect the environment. Their wines include Chenin, Quarts de Chaume, Anjou dry and sweet whites, Coteaux du Layon and Anjou Rouge. The company is also involved in social projects and creates jobs through partnerships with local institutions.

Production method
After harvesting, the grapes are gently pressed and transformed into must. Fermentation takes place in steel containers using the natural yeasts present and subsequently the wine is aged in oak barrels from the Burgundy region.

Tasting notes
Straw yellow colour. The perfume develops gradually, slowly revealing its hidden aromas; initially fruity notes of apple emerge, followed by a herbaceous touch and a subtle and pleasant hint of minerality. On the palate, the wine stands out for its great balance, with a harmonious combination of sapidity, freshness and refinement in a medium body. The persistence is characterized by the marked mineral component.
Possible combinations
This wine is perfect to accompany sashimi and fish dishes in general.
