History
The Ca’ La Bionda farm is located in Marano di Valpolicella, the soul and heart of the Valpolicella Classica, and was founded in 1902 by Pietro Castellani. The company stands today on 29 hectares of land cultivated with organic farming in a hilly position which enjoys an excellent south-east exposure. Today the fourth generation is present in the company who dedicate their meticulous attention to all the steps in the vineyard and in the cellar in order to obtain the highest possible quality. For the companies of Valpolicella producing Recioto and Amaroni the drying phase is crucial, as it is for this reality; for some years Ca’ La Bionda has completely renovated the premises and the cellar, allowing it to produce wines of ever higher quality.

Production method
Only the best grapes from the Ravazzol vineyard are used for the production of this amarone. The grapes are harvested and traditionally sent to the drying process, a very important procedure for the creation of a top-quality amarone. The grapes are stored in 6 kg boxes in ventilated rooms and left to dry for about 120 days, a period in which the grapes dehydrate leaving their percentage of sugar almost intact. At the end of the withering process, the grapes are pressed and undergo a slow fermentation at low temperatures which lasts up to 30-35 days. The refinement takes place in large oak barrels of 30 hl for 42 months with a further 8 months in the bottle before being placed on the market.

Tasting notes
Dark and intense ruby red color with garnet reflections. On the nose notes of ripe sour cherries, dried violets, candied fruit; spicy notes of vanilla, cloves and cinnamon, all on a background of complex iodized minerality of stones. Soft on the palate, warm and ripe sensations largely “covered” so to speak, by an extraordinary minerality and structure. Long and spicy finish, very intense.
Possible combinations
Ca’ La Bionda Amarone “Ravazzol” is one of the most suitable amarones for pairing in our opinion. Its limited softness compared to other wines of the same type makes it perfect in combination with red meats or tasty and well-cooked game dishes. Also ideal on selections of savory and seasoned cheeses, preferably not too salty. Also excellent for lovers of meditation wines, however we are always talking about a great amarone.
