History
The Zyme winery, located in the heart of Valpolicella Classica, precisely in the municipality of San Pietro in Cariano, was born from a history that has roots in an era in which the land was still cultivated following traditions. Founded by Celestino Gaspari, who started as a cellarman, became a consultant and later a wine producer, the company follows a philosophy that focuses on the balance between man and nature, promoting a harmonious and profitable collaboration. The thirty hectares of owned vineyards, distributed in different areas of the Verona area and the province of Vicenza, reflect the diversity of the territory, with its microclimates and unique characteristics linked to each parcel. These vineyards are grown using sustainable agronomic practices.

Production method
After harvesting, the grapes are left to dry naturally for at least 90 days before being delicately pressed. Fermentation occurs spontaneously in steel and concrete containers, while contact with the skins lasts for over 60 days. The refinement extends for 9 years in oak barrels from Slavonia, continuing even after bottling for a further 12 months.

Tasting notes
Ruby color, with garnet shades. On the nose fruity notes that evolve into delicate balsamic and spicy hints at the end. On the palate, it manifests itself with an excellent, broad and enveloping structure, with a powerful and warm sip that extends into a remarkably persistent finish.
Possible combinations
Ideal pairings with risottos with meat sauce, roast and grilled meat, stewed red meat, game, mature and blue cheeses.
