Description
History
The St. Michael Eppan winery (Italianized San Michele Appiano) was founded in 1907 with the model of the social winery and today brings together around 330 families of winemakers. The lands have been suited to the production of wine for more than 2000 years and in fact have a microclimate and soils capable of giving life to great perfumed wines with character. A qualitative turning point took place in 1977 with the arrival of Hans Terzer, today considered one of the top 10 winemakers in the world.

Production method
The grapes are harvested by hand and in crates, in order to guarantee the integrity of the fruit. Most of the grapes undergo fermentation in steel vats (about 75%) in which the wine ages on the fine lees until April of the year following the harvest. The remainder is vinified and aged in tonneaux (about 15%) and in large oak barrels (10%).

Tasting notes
At the sight straw yellow color with greenish reflections. On the nose, a dense bouquet of yellow fruit such as ripe peaches, white grapes, elderflowers, rose petals, wild herbs, almonds. In the mouth it is soft, ample and fruity, with lively acidity and a longer and more complex finish.
Possible combinations
Sauvignon Sanct Valentin Eppan is a wine from the most prestigious line of the cellar capable of combining freshness and fruity notes with a more mature complexity. In combination we see it well with tasty fish dishes such as grilled fish, perch or sole. Also very good with a nice saffron risotto.
