History
The recent history of the Niedrist company begins a long time ago in Ronco a Cornaiano, in the splendid Oltradige wine-growing area, as the current estate has belonged to the family for more than 170 years. In 1989 Ignaz and Elisabeth Niedrist will then resume wine production with the aim of producing wines of great depth and quality. New lands were therefore acquired which made it possible to greatly differentiate the variety and styles of the wines produced, with the inclusion, among others, of a Lagrein vineyard. Today the company combines stylistic and qualitative growth with the growth of the family nucleus, seeing the new generations employed: therefore Maria, Franz and Johannes Niedrist are at work, bringing new knowledge and experience to the company.

Production method
This wine is created with Sauvignon grapes from two separate vineyards, even if in both vineyards they are about 25 years old. Also thanks to this it is possible to obtain such an aromatically rich wine. The harvest takes place around the beginning/mid-September, rigorously by hand to preserve the best grapes. Fermentation takes place in steel and lasts for about 14 days at 19-20°C thanks to selected yeasts. The wine is deliberately not made to undergo malolactic fermentation; the refinement takes place in 11 hl acacia wood and steel barrels. A stabilization takes place thanks to the winter cold and a light filtration.

Tasting notes
Slightly veiled intense straw yellow color with greenish hues. On the nose notes of ripe yellow fruit, citrus peel, tropical fruits such as mango, papaya and pineapple, bay leaf, gooseberry, nettle and peppermint, with a background of minerality and white pepper. In the mouth complete, aromatic, intense and very fresh.
Possible combinations
Perfect to be appreciated in all its aromatic nuances if drunk by the glass for lovers of the genre. Goes well with delicate dishes based on asparagus or fish dishes with herbs.
