Description
History
The idea of creating a great Italian brandy was born during a trip to France in the 1980s by Mario Pojer and Fiorentino Sandri. Inspired by the finest Cognacs, they developed a project that controls every stage of production in-house. Distilled in the estate’s custom-designed discontinuous bain-marie still, Acquavite Divino has become one of the flagship spirits produced at the Faedo distillery in Trentino.
Grape variety
Schiava and Lagarino (more recent releases may also include base wines from Chardonnay, Pinot Bianco and Pinot Nero originating from the estate’s sparkling wine production).
Vinification
The base wine is produced from grapes pressed under controlled atmosphere without antioxidants. After fermentation, it remains on its lees until distillation in the estate’s proprietary discontinuous bain-marie still. The resulting spirit, initially around 70–75% ABV, is aged for 10 years in 225-litre French oak barrels previously used for Chardonnay, followed by further maturation in stainless steel before being slowly reduced to bottling strength with spring water.

45% ABV.
Tasting notes
Deep golden amber in colour. The bouquet reveals aromas of quince, apricot, dried plum and white peach, complemented by vanilla, cocoa, sweet spices and subtle balsamic nuances. On the palate it is warm, smooth and velvety, offering remarkable richness and a naturally soft texture despite containing no added sugar. The finish is long, elegant and exceptionally refined.
Food pairings
Best enjoyed neat at 18–20 °C as a meditation spirit. It pairs beautifully with dark chocolate, dry pastries, toasted nuts, premium cigars and long-aged cheeses.
