Description
History
In 1908 Don José Varela Blanco decided to open his sugar factory in Panama, the first in the country. The business grew luxuriantly for the first few years so in 1936 Don José decided to make a change in the business following the instructions of his children and began to convert the factory’s production into rum. The experience already gained in the production of sugar cane meant that the raw materials selected by the company were immediately of the highest quality; the range of labels produced today is varied and the rums are distinguished by the softness and finesse that they have always expressed at every sip.
Production method
To produce an “industrial” rum (this is how rums produced in the islands of former Spanish domination are called) molasses is used, which are often nothing more than sugar beet residues after processing for the production of the latter. This is then fermented, created a must and distilled. Subsequently these can be aged in wood and then created a blend of rums of various degrees of aging in order to find a perfect balance.

Tasting notes
Dark amber colour. On the nose notes of ripe fruit, caramel, honey and sweet spices. On the palate it is enveloping, balsamic and spicy, with a persistent finish.
Usage
Perfect at the end of a meal or as a meditation.
