Description
History
Filipa Pato opened her own company in 2001 and tried to acquire vineyards suitable for the production of Bical, Maria Gomes and above all the indigenous red Baga. Filipa and her husband William’s winery is located in Ois do Bairro, where they are experimenting with the biodynamic agricultural approach and innovative winemaking techniques, such as winemaking in terracotta amphorae. Their territorial wine of excellence is called “Nossa” and comes from the best old vines in the area. Filipa’s wines have a rare Atlantic finesse and offer a combination of tradition and gastronomic innovation, in the heart of one of the best wine-growing regions of Portugal.

Production method
Produced with the champenoise or classic method, with two fermentations: the first alcoholic in vats and the second in the bottle which creates carbon dioxide with specific yeasts. This gives rise to the bubbles that are noticeable when uncorked.

Tasting notes
It has an intense straw yellow color with golden glazes, persistent perlage. On the nose notes of lemon peel and ocean breezes, yellow apple and ripe peach. In the mouth straight, fresh and precise, lemon zest and ocean breezes.
Possible combinations
It goes perfectly with fresh cheeses, fish tartare, steamed shellfish and fish appetizers.
