Description
History
Founded in the early 1980s by Enzo Manicardi, the Manicardi winery is located in the hills of Castelvetro, in the province of Modena. The company is renowned for producing wines that reflect the traditions and characteristics of the Emilian territory, with particular attention to Lambrusco Grasparossa, one of the area’s most prized varieties.

Production method
- Harvest: Manual harvesting of ripe grapes from the hillside vineyards of Cà del Fiore.
- Vinification: Fermentation at controlled temperature to preserve the fruity and floral aromas typical of the variety.
- Sparkling process: Secondary fermentation in autoclave using the Charmat/Martinotti method, which gives the wine its characteristic natural effervescence.
Alcohol content
- 11.5% vol.
Tasting notes
- Color: Intense ruby red with violet reflections and lively froth.
- Aroma: Intense and characteristic, with hints of plum and violet, fine and persistent.
- Taste: Dry, savory, well-structured, full-bodied, characteristic, and lively.
Possible pairings
Perfect for accompanying traditional Emilian cuisine, such as cotechino with lentils, tortellini in broth, cured meats, and aged cheeses. It also pairs excellently with more structured red meat dishes. An excellent choice for an energetic aperitif to stimulate the palate.
