Production Method
Grapes, harvested in the first ten days of October from the Lapina vineyard with a yield of 65 quintals per hectare, undergo alcoholic fermentation in temperature-controlled cement vats, followed by 15 days of maceration. Malolactic fermentation occurs in large, used French oak barrels. The wine ages for about 30 months in barriques (30% first passage, 70% second passage), followed by 3 months in cement and bottle aging for 6-8 months.
