History
Champagne Sadi Malot is a family business located in Villers-Marmery, Montagne de Reims. Founded in 1929 and led by Franck Malot and Florian Villière, the winery is passionate about working with Chardonnay. Using a perpetual reserve since 1982, they create wines with minerality, refinement, freshness and tension, respecting the terroir. As winemakers, they are committed to the good development of the vine to obtain quality grapes and preserve the typicality of the territory. Nature is a source of inspiration to capture the essence of the encounter between grape varieties, soils, climate and winemakers.
Sadi Malot’s champagnes are classified HVE as well as organic and biodynamic.

Production method
The management of the vineyard is based on biodynamic practices, such as respect for lunar and planetary cycles, organic compost, biodynamic preparations, no chemicals, to produce natural and sustainable wines. The assembly of this wine also includes 35% of reserve wines aged with the solera method since 1982. Fermentation is carried out in steel with selected yeasts, followed by malolactic fermentation. The second fermentation takes place in the bottle according to the Champenoise method and the wine rests on the lees for 24 months. The final dosage is Brut, with 9 g/l of residual sugars and bottling takes place without prior clarification.

Tasting notes
It has a lively light straw yellow color and a beautiful fine bubble. The nose reveals clear aromas of delicate white fruit, reminiscent of golden apple and pear, as well as white flowers. On the palate it recalls bread-making notes with notes of delicate citrus fruits and peaches. The texture is soft and creamy, giving a tonic and persistent freshness.
Possible combinations
Champagne for every occasion: excellent for classy aperitifs.
