Production Method
The grapes are harvested early in the cooler morning hours to preserve acidity. They are then destemmed and crushed, rapidly cooled to 6 °C, and gently pressed without maceration. The resulting must is first clarified statically at 4 °C, then transferred and separated from the lees, and finally fermented at a controlled temperature of 15 °C. The wine is aged for 3 months on fine lees at 10 °C, avoiding malolactic fermentation. Following this, the cuvée is assembled, and a slow sparkling process takes place in autoclave (long charmat method with extended aging on the lees), followed by stabilization and bottling, which occurs about 6 months after the sparkling process.

Tasting Notes
The wine exhibits a delicate and luminous rosé color, reminiscent of peach blossoms, with vibrant and bright reflections. The perlage is dense and persistent, characterized by a white foam that slowly and elegantly dissipates in the glass. On the nose, intense and inviting aromas of fresh fruit emerge, such as peach, wild strawberries, and ripe papaya. On the palate, it displays great freshness, liveliness, and creaminess, with a savory finish and a pleasant harmony between the different components.
