Description
History
This Sylvaner comes from the Valle Isarco (Eisacktal, Alto Adige) — one of northern Italy’s prime areas for precise, mineral-driven white wines. Vineyards planted at higher altitudes benefit from strong diurnal temperature swings and mineral-rich soils, yielding wines with clear aromatics and vibrant structure. The local interpretation of Sylvaner reflects respect for tradition combined with a focus on quality and purity in winemaking.

Vinification
Hand-harvested grapes at optimal ripeness are fermented in stainless steel at controlled temperatures to preserve freshness and varietal aromas. After fermentation, the wine ages on fine lees for a calibrated period to enhance texture and complexity without oak influence. A short bottle rest follows before release to harmonize the wine’s components.

Tasting notes
Straw yellow with green highlights. Aromas of white-fleshed fruit (apple, pear), delicate citrus, subtle floral notes and hints of alpine herbs, with an elegant mineral thread. On the palate: fresh, savoury and well-balanced with lively acidity, smooth texture and a clean, pleasant, persistent finish.
Food pairings
Pairs beautifully with seafood starters, shellfish, white fish carpaccio, sushi and sashimi, delicate risottos and herb-accented vegetarian dishes. Also excellent with gourmet salads, light Asian cuisine and fresh to soft cheeses.
