Description
History
Produced by Tristan Hyest in the Vallée de la Marne (Champagne, France), this cuvée reflects a genuine, craft-oriented approach to winemaking rooted in family tradition. Hyest’s focus is on expressing terroir and grape identity, producing wines with clarity, freshness and personality from the region’s vineyards.
Grape variety
Pinot Meunier 100% (with a portion of reserve wines to enhance complexity)
Vinification
Traditional method with secondary fermentation in bottle. The wine ages on lees for an extended period (30–36+ months) to build complexity and fine perlage. The production approach is artisanal, with reserve wines often blended to add depth while retaining the fresh, varietal profile.
Alcohol content
Approx. 12.5% vol.
Tasting notes
Straw yellow with persistent fine bubbles. Aromas of white and red fruits, pastry and gentle spice. On the palate: fresh, balanced and savoury with lively acidity, harmonious structure and a pleasant, lingering finish.
Food pairings
Pairs beautifully with seafood starters, shellfish, oysters, fish carpaccio, sushi and sashimi, delicate risottos, grilled or baked fish dishes and semi-aged cheeses. Also excellent as an elegant aperitif.
