Description
History
Located in Radda in Chianti, the estate is managed by Sean O’Callaghan and Karl Egger with a focus on organic and biodynamic farming, high-elevation vineyards (450-700 m), and soils of alberese and galestro. “Uno” is derived from the best Sangiovese grapes on the estate, meticulously vinified and aged to highlight intensity and purity.

Vinification
Spontaneous fermentation in cement tanks with about 20% whole clusters, maceration for 40-60 days, followed by approximately 18 months of ageing in around 10% new tonneaux and the remainder in cement and stainless steel. Bottled unfiltered and unfined.

Tasting notes
Bright ruby red colour. Aromas of fresh cherry, wild strawberry, light red spices, Mediterranean herbs and a pronounced mineral undertone of limestone and galestro. On the palate it is elegant with fine but present tannins, vibrant acidity, medium-full body and a long, focused, sapid finish.
Food pairings
Pairs excellently with roasted red meats, light game, porcini mushrooms, steak, rich first courses like game ragù pasta and aged cheeses. Also ideal for contemplative tasting or cellar aging.
