Description
History
Pojer e Sandri is a Trentino winery founded in 1975 by Fiorentino Sandri and Mario Pojer. Born by chance, it immediately achieved success with its first wine, the Palai Müller Thurgau 1975. Despite the difficulties of the territory, the founders focused on heroic viticulture, gaining experience and innovation from visits to other wineries. Currently, Pojer e Sandri owns about 30 hectares of vineyards distributed in six municipalities, benefiting from the breeze of the Ora del Garda. The main vineyards are located in the Val di Cembra, of volcanic origin, and in Faedo and San Michele, with sedimentary and calcareous soils. The company grows different varieties of grapes, from the most traditional to the most resistant, and the winery is a place of continuous experimentation, with unique labels inspired by Albrecht Dürer.

Production method
The base fermentation takes place in small oak barrels. The Pinot Noir is placed in barrels previously used for the aging of the “Divino” distillate. The base wines rest for 6 months on their yeasts, and are mixed weekly thanks to the hourglass effect. In spring, the second fermentation takes place in the bottle. Disgorging takes place after a minimum of 18/24 months of permanence on the yeasts.

Tasting notes
Old pink color with coppery reflections, very fine with a persistent crown. The aroma is broad and complex, with notes of red fruits such as morello cherry and raspberry, which clearly recall the characteristics of Pinot Noir. In the background, the notes of Chardonnay can be perceived: almond paté, hazelnut and hay. The whole is enriched with aromas of Viennese pastry: vanilla, toasted barley coffee and cocoa.
Possible pairings
Perfect with dishes based on tasty cheeses, salmon and some first courses, especially if with tomato sauce, such as lasagna or first courses with meat sauce. Also excellent for a special toast in company.
