Description
History
Named after the 19th‑century Bolgheri outlaw “Scalabrone,” this vino rosato is made by separately vinifying Cabernet Sauvignon, Merlot, and Syrah. Gentle maceration and cool stainless‑steel fermentation preserve freshness and varietal identity.

Destemmed, short skin contact at 10–16 °C (4–12 h), fermented in stainless steel at ≤16 °C, then blended

Tasting notes
Light peony pink. Intense aromas of cherry, raspberry, pomegranate, and rose petals, with Mediterranean herb notes. Fruity, savory, with vibrant acidity and long finish.
Food pairings
Excellent with seafood, fish soups, tomato-based pasta, sushi, or as a summer aperitif.
