Description
History
“Vin San Giusto” is the white dessert wine of San Giusto a Rentennano estate, made from carefully selected grapes left to dry in order to concentrate aroma and sugar. It is produced only during vintages suitable for healthy drying and perfect ripeness. 2017 was such a vintage, with hand‑harvested grapes and natural drying, following tradition to highlight the Vin Santo character: balance between sweetness, acidity and oxidative notes.
Grape variety
A blend of dried white grapes (mainly Trebbiano and Malvasia according to the traditional local style)
Vinification
Selected grapes are dried to increase sugar and aroma concentration; slow fermentation; aging in small barrels (“caratelli”) for a long period, including controlled oxidation typical of Vin Santo, followed by bottle aging.
Alcohol content
About 14 % (indicative, may vary slightly depending on bottling)
Tasting notes
Luminous amber color. Aromas of dried apricot, chestnut honey, candied fruit, hazelnut, sweet spices and a light oxidative tone that adds depth. On the palate it is sweet but balanced by pleasant acidity, soft structure, with a long, enveloping finish.
Food pairing
Perfect with cantucci biscuits, oven‑baked sweets, pastry creams, fruit tarts, dark chocolate or hard and well aged cheeses. Serve at 14‑16 °C.
