Description
History
San Giusto a Rentennano is an estate located in Gaiole in Chianti, with vineyards farmed organically since 2001 and certified since 2006. Percarlo is the estate’s flagship wine: made from 100% Sangiovese in the best vintages, selecting the finest bunches with very low yields (around 0.8 kg per vine). The winemaking includes long maceration; ageing in French barrique and tonneaux for nearly two years, followed by further bottle ageing. The 2021 vintage is considered one of the most balanced, combining energy, acidity, and phenolic maturity.

Vinification
Fermentation and maceration in enameled concrete, stainless steel, and oak vats for about 30‑35 days; ageing in French oak barrique and tonneaux for 20‑22 months; followed by about 18 months of bottle ageing.

Tasting notes
On the nose, cherries, raspberries, dried plums, aromatic herbs, graphite and cedar. On the palate it is full‑bodied, with well‑present tannins, vibrant acidity balancing the fruit, structure supporting a long, savory and persistent finish.
Food pairing
Perfect with roasted meats, braised dishes, game, rich Tuscan cuisine, aged cheeses. Best served at 18‑20 °C.
