Description
History
The Domaine Drouhin is today the largest and most extensive estate in all of Burgundy and can count on 80 hectares of land divided as follows: 38 hectares in Chablis, 38.5 hectares in Côte de Nuits and Côte de Beaune, 3.5 hectares in Côte Chalonnaise. Within these, the majority are vineyards classified as Premier and Grand Crus, all planted with Pinot Noir and Chardonnay. The “domaine” has been expertly built over the years by what is one of the most important families in the French wine scene, thanks to targeted purchases and agreements between local families; some vineyards are listed among the most famous in Burgundy such as Clos des Mouches, Montrachet Marquis de Laguiche, Musigny, Clos de Vougeot, Corton-Charlemagne and others. Since the 2008 vintage, the name Vaudon has been associated with Joseph Drouhin for all his Chablis wines as a sign of historical ties with the territory.

Production method
The pinot noir grapes used for the production of this wine come for the most part from the Drouhin domaine in Rully, a village located just below Santenay (which marks the southern end of the Côte d’Or and Côte de Beaune). The agricultural techniques used are organic farming techniques since 1990, converted a few years later to biodynamic. The soils are predominantly calcareous, the vines are ancient, as is the village of Rully. The grapes are harvested by hand and undergo soft pressing, after which the vinification process with fermentation on the skins continues for 2/3 weeks thanks to indigenous yeasts with frequent submersion of the cap (usually once a day). The refinement takes place in barriques (10% new barriques) and lasts for 12-15 months, during which the wine is frequently checked so that the elegance and expression of the territory are always at the highest levels.

Tasting notes
Intense ruby red color, with a garnet edge. On the nose notes of small red fruits such as redcurrant, blueberry and berries, with violet flowers, balsamic and minerality, with notes of tobacco and damp undergrowth. On the palate the wine is refined, soft and velvety, with good body. The tannins are very elegant and silky, with a fresh final acidity and pleasant notes of spice. The notes and flavors are those of a great red Burgundy.
Possible pairings
Excellent pairing with tasty first courses, for example with wild mushrooms or truffles, or with white meat second courses, even tasty ones. Also perfect with medium-aged or tasty cheeses.
