Description
History
Fattoria La Leccia is located in Montespertoli, among the rolling hills of Florence, where it cultivates its vineyards with deep respect for the local terroir. The name Rubedo comes from alchemy and refers to the final stage of transforming lead into gold, symbolising perfection and fulfilment. This Metodo Classico represents the pinnacle of the estate’s production—its precious “pink gold.”
Grape variety
100% Sangiovese.
Vinification
The grapes are hand-harvested during the coolest hours of the morning, destemmed, cooled to 6 °C and gently pressed without skin maceration. The free-run juice undergoes static clarification before fermenting in stainless steel at a controlled temperature of 15 °C. The base wine rests on its fine lees for about three months without malolactic fermentation. After blending, the cuvée undergoes secondary fermentation in bottle according to the Traditional Method and ages for at least 48 months on the lees. Hand remuage is followed by disgorgement without dosage and a further 4-6 months of bottle ageing.

Tasting notes
An evolved rosé colour with elegant bronze and golden reflections. The mousse is extremely fine and persistent. The bouquet reveals dried fruit, citrus, butter, pastry and bread crust aromas. The palate is fresh, saline and beautifully balanced, with a creamy texture and a long finish marked by notes of orange and ripe citrus.
Food pairings
An outstanding partner for seafood carpaccio, tartare, oysters, shellfish, seafood platters, sushi and sashimi. Its structure also makes it an excellent match for seared tuna, seafood pasta, delicate white meats and elegant multi-course meals.
