Description
History
Fattoria La Leccia is located in Montespertoli, among the rolling hills of Florence, where it focuses on expressing the full potential of Sangiovese. The name Rubedo comes from alchemy and refers to the final stage of transforming lead into gold, symbolising perfection. The #60 edition was created as a special release, extending lees ageing to five years to achieve greater complexity, elegance and ageing potential.
Grape variety
100% Sangiovese.
Vinification
The grapes are hand-harvested during the coolest hours of the morning before full véraison and gently pressed without skin maceration. Fermentation takes place in stainless steel at a controlled 15 °C, after which the base wine rests on its fine lees without undergoing malolactic fermentation. Secondary fermentation occurs in bottle according to the Traditional Method, followed by 60 months of ageing on the lees. Hand remuage is completed before disgorgement without dosage, preserving maximum precision and purity.

Tasting notes
An evolved rosé colour with elegant bronze and golden reflections. The mousse is exceptionally fine and persistent. The bouquet reveals dried fruit, candied citrus, bread crust, butter, pastry and delicate mineral nuances. The palate is bone dry, creamy and refined, supported by vibrant acidity and pronounced salinity, leading to a long finish marked by orange and ripe citrus notes.
Food pairings
Perfect with oysters, shellfish, seafood carpaccio, tartare, sushi and sashimi. Thanks to its extended lees ageing, it also pairs beautifully with seared tuna, seafood risotto, delicate white meats, mushroom dishes and soft to medium-aged cheeses.
