History
Produced by Torre alle Tolfe, a certified organic winery near Siena, using spontaneous fermentation and bottle refermentation of part of its Rosato Lunella. A handcrafted, natural method that honours tradition and terroir.

Vinification
Gentle pressing, fermentation in cement with indigenous yeasts, springtime bottle refermentation before primary fermentation finishes, followed by 12 months aging on lees.

Tasting notes
Intense pink with fine bubbles. Aromas of fresh cherry and red berries, with delicate salinity and a hint of citrus. On the palate: fresh, fruity, slightly savory, with gentle effervescence and a balanced finish.

Ideal as a sparkling aperitif or paired with seafood crudos, sushi, vegetarian dishes, fresh starters, and summer buffets.
