History
Clément is a historic distillery operating on the island of Martinique for the distillation of agricultural rums. Active since 1887, it strictly adheres to the rules established by the A.O.C. for the production of Rhum Vieux Agricole, and was founded in that year by Homère Clément, who was among the first to use pure sugar cane juice, fundamental for the quality of a great agricultural rum.
Production method
To produce an agricultural rum the starting “base” is given exclusively by the distillation of pure fermented sugar cane juice. This is a procedure that was adopted for the first time in the Central American islands of former French domination, especially Martinique. Usually, this process produces more complex and elegant products, characterized by notes that tend to be drier and drier than the rest of the rums.
