Description
History
From Domaine Raveneau, established in 1948 and renowned for low yields, hand-harvested fruit, and reliance on older oak barrels. The “Vaillons” parcel (0.5 ha) is one of the domaine’s signature Premier Crus. Barrel-fermented and aged on lees for 12–18 months in older barriques, it exemplifies finesse and terroir expression.

Gentle pressing, barrel fermentation in mid-aged wood, extended sur-lie aging with bâtonnage, strict old-vine management, no new oak usage.

Tasting notes
Pale straw. Aromas of lemon zest, green apple, white flowers, flint, and sea-salt minerality. On the palate: focused, mineral-driven, vibrant acidity, elegant structure, and a long, savory finish. A Premier Cru that gains depth and harmony over time.
Food pairings
Ideal with shellfish, refined fish dishes (like sea bass or turbot), foie gras, roast poultry, and washed-rind cheeses. Drinkable through 2032+.
