Description
History
Domaine François Raveneau is regarded as the benchmark for classic Chablis. Founded in 1948, the domaine maintains extremely low yields and traditional winemaking methods. The Montée de Tonnerre climat, located on a southeast-facing slope, is considered one of the closest in quality to a Grand Cru, delivering wines of remarkable balance and complexity.

Production method
The grapes, hand-harvested from old vines, are gently pressed. Fermentation occurs with native yeasts in old oak barrels to enhance the expression of terroir. The wine ages for 18–20 months on fine lees without bâtonnage, preserving freshness and tension.

Color: Pale yellow with golden reflections

Nose: Citrus, green apple, white flowers, with clear mineral notes of flint

Palate: Structured and deep, with vibrant acidity and a long, saline and taut finish
Possible pairings
Perfect with oysters, shellfish, ceviche, sushi, baked fish, and white meats. Also excellent with goat cheese and refined vegetable-based dishes.
