Description
History
The history of Cantine San Marzano began in 1962, when nineteen winemakers from San Marzano, a small town in the province of Taranto, joined forces with the common goal of producing wines that clearly reflected the varietal and territorial characteristics. Over the years, this small company has expanded to include 1200 winemakers, becoming a symbol of prestige in the Apulian wine scene. Each winemaker manages on average just over one hectare of vineyard, for a total of 1500 hectares, a proportion that allows them to maintain high quality despite the presence of a consistent production.

Production method
The grapes are harvested by hand in the second half of September, when they are already fully ripe. The grapes undergo pressing and destemming, followed by cold maceration for 24-48 hours, then thermo-controlled maceration and alcoholic fermentation with natural yeasts that lasts about 10 days. An 18-month refinement in barriques gives the wine softness, structure and remarkable longevity.

Tasting notes
Intense ruby red color with a purple edge. On the nose, a bouquet of aromas ranging from plum to cherry jam, with hints of tobacco and spices on a fruity base. The taste is warm, velvety, rich in refined tannins, and ends with a long finish that offers pleasant notes of cocoa, coffee and vanilla.
Possible pairings
Perfect with hearty and tasty meat dishes, preferably baked or grilled and even quite cooked, as long as they are not particularly greasy or fatty.
