History
Located in Sancerre, Domaine Joseph Mellot is a historic, family-run estate with roots dating back approximately 500 years. For generations, the Mellot family has passed down the secrets of the great white wines of the Loire, carrying on a long tradition up to the present day. The cultivation of the vineyards takes place with full respect for the environment, with minimal interventions and a reduced ecological impact; all this to create labels, like this one, that reflect the excellence of an extraordinary territory, producing refined and elegant wines that leave an indelible mark on the taste memory thanks to their exceptional freshness and minerality.

Production method
Fermentation and aging take place in oak barrels, of which 30% are new, inside the ancient cellars in the heart of Sancerre. During this period, the wine matures on the yeasts with frequent bâtonnage and is bottled in the winter following the harvest, after a light filtration.

Tasting notes
Lively straw colour. The nose is of great elegance and complexity, with hints of white flowers, ripe fruit, exotic fruit, honey and mineral nuances. On the palate it is enveloping, with notes of honey and exotic fruit, fresh, intense and mineral, and with a long persistence.
Possible combinations
It pairs beautifully with fresh oysters, creamy goat cheeses, grilled fish and citrus-based dishes.
