Pale straw with persistent fine bubbles. On the nose: pear, Honeycrisp apple, peach, mango, honeysuckle, vanilla, and brioche. Palate: creamy and plush, with flavors of baked apple, apricot jam, acacia honey, candied orange peel, cardamom and licorice, wrapped in minerality and refreshing tension.
Food pairings
Ideal as an aperitif, and pairs beautifully with sushi, oysters, shellfish, and throughout a meal. Also superb with fresh cheeses and light charcuterie
