Description
History
The Paillard family has cultivated vineyards in Bouzy since the 1700s. Today the estate is run by generations who combine tradition, meticulous vineyard care and a deep respect for terroir. Les Parcelles is made from the domaine’s representative Grand Cru plots and expresses Bouzy’s identity: the power of Pinot Noir, the finesse of Chardonnay, and a vibrant mineral backbone.

Vinification
Gentle pressing, fermentation mainly in stainless steel with a portion in oak, extended ageing on the lees to enhance complexity and finesse. A meaningful percentage of reserve wines ensures balance and consistency. Low dosage to highlight purity and precision.

Tasting notes
Bright straw yellow with fine, persistent bubbles. Aromas of ripe citrus, white-fleshed fruit, white flowers, fresh bread crust and a clear mineral tension. On the palate it is creamy yet vibrant, with lively acidity, elegant structure and a long, chalky finish typical of Bouzy Grand Cru.
Food pairings
Excellent as a refined aperitif, with raw seafood, fish tartare, sushi, ricciola carpaccio, delicate first courses and fresh cheeses. Also pairs beautifully with elegant vegetarian cuisine.
