Description
History
The secret to the excellence of Chablis wines lies in its geology: the “chablisienne” is essentially built on a large basin of limestone and clay known as “Kimmeridge,” primarily composed of prehistoric oyster shells and marine fossils. This contributes to the legendary minerality of the magnificent Chardonnays from this region. Isabelle and Denis Pommier are a dynamic couple based in Poinchy, well-known among the new production excellence of Chablis. Active as vintners since 1990, their vineyard area has grown from 2 to 15 hectares over the years. Now, 24 years after their first bottling, they enjoy significant critical acclaim on an international level. Notably, Robert Parker rated their cuvée “Croix aux Moines 2010” as the best Chardonnay in the world for that vintage. The family produces four crus: the aforementioned “Croix aux Moines” classified as village, and three 1er Crus: the powerful “Troesmes,” the mineral “Côte de Léchet,” and the elegantly refined “Fourchaumes.” These classic-style wines, featuring bright fruit and captivating verticality, are produced with a passionate interpretation of the terroir through organic farming methods. All fermentations are spontaneous and use only indigenous yeasts.

Production Method
The vineyard is managed organically, and the vinification also relies on indigenous yeasts. The vines are, on average, 25 years old and are located in the Hautérivien vineyard, in the municipality of Villy, north of the village of Chablis. After the harvest, the grapes are vinified whole through gentle direct pressing and spontaneous alcoholic fermentation of the must in temperature-controlled stainless steel tanks. Here, malolactic fermentation and 6 months of aging on fine lees take place before the final bottling.

Tasting Notes
It showcases a pale yellow color with bright golden reflections. On the nose, it reveals a fine and complex profile, with notes of white-fleshed fruit and citrus intertwining with delicate hints of white flowers. A subtle mineral vein enhances the bouquet. On the palate, it is fresh and savory, with a full-bodied and well-balanced character, leading to a persistent finish with mineral and citrus accents.
