Description
History
The Omina Romana estate, located in Velletri (Rome) in the Castelli Romani area, was founded to highlight local viticulture with a strong terroir focus and quality approach. The 2022 Chardonnay is part of the Ars Magna line and is produced from hand-picked grapes on vineyards oriented east-west, on volcanic sandy-loam soils, with a winery protocol aimed at preserving finesse and freshness.

Vinification
Grapes are hand-harvested, sorted and cold-macerated for approximately 48 hours. Gentle pressing follows, with fermentation partly in stainless steel and partly in new French oak barrels. The wine is aged on fine lees for about 6 months and then bottled and further refined before release.

Tasting notes
Bright straw yellow with golden reflections. Aromas of white peach, pear, white flowers, subtle toasty/wood notes. On the palate it is balanced and structured, with clear minerality, well managed acidity and a long, savoury finish.
Food pairings
Pairs well with oven- or grilled fish, shellfish, vegetable risottos, light white meats, fresh or semi-aged cheeses. Also excellent enjoyed on its own for a sophisticated glass.
