Description
History
La Combarbia is a family-run farm located in the Cervognano area of Montepulciano. Founded in the 1960s by Novilio Mariani, the estate is now led by Gabriele Florio, who since 2016 has embarked on a path of renewal, combining local winemaking traditions with the most modern cultivation and vinification techniques.
Grapes used
- 100% Sangiovese
Production method
The grapes, hand-harvested from vineyards located at about 300 meters above sea level on predominantly clay soils, undergo spontaneous fermentation for about 25-30 days with continuous pump-overs. The wine matures in Slavonian oak barrels and a small percentage in French oak barriques for at least 24 months, followed by bottle aging, ensuring complexity and structure in the final product.

Tasting notes
With an intense ruby red color tending towards garnet, the nose offers a rich bouquet of red berries, blackberry, and a distinctive violet scent. On the palate, it is well-balanced, fragrant, and crisp, with soft and delicate tannins and a persistent finish.
Possible pairings
It pairs perfectly with first and second courses based on meat, game, and aged cheeses. Also ideal with traditional Tuscan dishes, it enhances the flavors of rich and savory preparations.
