Description
History
Nicolas Maillart is an independent grower in the Montagne de Reims who works his own vineyards with artisanal care and a deep sense of terroir. Platine is one of the house’s signature cuvées, produced without any dosage (Brut Nature) to express the fruit and soil’s natural integrity. Traditional winemaking with spontaneous fermentations and extended lees ageing results in complexity and nuance.

Traditional method with secondary fermentation in bottle, extended lees ageing to build structure and depth, and zero dosage (Brut Nature) to preserve freshness and purity. The winemaking approach highlights terroir and varietal expression.

Tasting notes
Straw yellow with very fine, persistent bubbles. Aromas of fresh citrus, green apple, bread crust, delicate autolytic notes and minerality. On the palate: taut and vibrant with bright acidity, pronounced sapidity, balanced structure and a long, clean finish. The lack of dosage underscores freshness and precision.
Food pairings
Outstanding as an elegant aperitif and with raw seafood, oysters, white fish carpaccio, sushi and sashimi. Also excellent with richer seafood dishes, shellfish, delicate risottos or fresh cheeses. Ideal for contemplative tasting moments.
